Today we are making the polenta accompaniment to the Korean inspired prawn and tilapia this takes no time at all, 7-10 minutes and you are done! Not a lot of work here, polenta or cornmeal is something I grew up eating a lot of. Much loved porridge with nutmeg and mace spice...mmmmm, perhaps I will make some later.
Anyway, this dish is great for those of us sensitive to gluten it is a great alternative to grains or just for a bit of variety. If you have coeliac disease however, it's a good idea to check carefully that the cornmeal/polenta you are purchasing has been produced in an environment free of cross contamination with other grains not suitable for coeliacs. One note of warning, a little goes a long way so don't go nuts or worry if you think the amount in the recipe at the start looks very small. Trust me, it's enough!

Ingredients
serves 4
- 1 cup coarse cornmeal
- 1 teaspoon dried thyme
- 1 (400ml) tin reduced fat coconut milk
- 4 cups hot water
- 1/2 cup cubed chorizo
- salt and pepper to taste #optional
Topping
- 1 stick celery, sliced thinly
- 1 spring onion, chopped finely
- 1/2 red Chilli, roughly chopped

In a clean saucepan, add half the coconut milk and half the water bring to the boil then add the chopped up chorizo and cook for 3 minutes.

Add the the cup of cornmeal and stir well, continue stirring till liquid is absorbed. Add the rest of the coconut milk, water and thyme, continue cooking stirring for another 4 minutes.

This should take only 5 minutes total to form a creamy smooth paste.
Done!
Wash the broccoli florets and add to a microwavable bowl. Add a little water, cover and cook for 3 minutes. Remove from the bowl and refresh under cool running water.
