Fried dumplings are up there with the best of them. It reminds me of Sunday morning breakfast in the Caribbean. Where it is served with ackee and saltfish and or callaloo, maybe a bit of breadfruit on the side or a spicy bean stew. This is the kind of breakfast that will see you through a whole day of work and play.
Anyway, I was feeling somewhat nostalgic and decided this would fit the bill, made it for mother's day with a spicy bean stew style dip and avocado. Yum!

Ingredients
make 8-12 dumplings

- 150g plain flour
- 150g self raising flour
- 1/2 teaspoon bicarbonate soda
- 1/2 teaspoon salt
- 1/2 cup cold water
- 1 teaspoon baking powder
- 1 teaspoon sugar
- enough oil for deep frying

Preparation
Turn the oven on at 100 degrees and line a baking tray with baking parchment.

knead till you form a firm dough, you may need a handful of extra flour for dusting if the dough is too soft.

The dough should be firm, but not over worked.

Taking small sections of dough roll between the palms of the hands.
Form a smooth ball, do this till you have used up all the dough, set these formed balls on a floured clean surface or clean plate. Turn up the heat under the pan with the oil. You can tell the oil is ready if you drop a small piece of dough into the oil, and it immediately
form bubbles and float to the top of the oil, it's ready.

Taking the dough balls one at a time carefully lower them into the hot oil, don't over crowd the pan. Turn the balls once they have puffed up and turn brown on one side, continue cooking till both side have turned brown and they start floating (if they crack don't worry about it).

Take the cooked dumplings out the oil and place on a wire rack over the prepared baking sheet in the oven.
This will finish them off, allowing any excess oil to drip out and keep them warm while the rest are being cooked.
Repeat with remaining dough balls till you have fried all the raw dough.
Done!
