Tarragon Turkey Burgers

These turkey delights are an old time favourite with friends and family alike, they are low in fat and full of  flavour, not to mention easy as pie to make. So simple that even the little ones can get involved with this activity, as long as you have some gloves for handling the chilli. These were also on my previous blog which is now not active. Serve these gorgeous meat feasts with something simple like steamed vegetables or a salad. 
Oh, yeah and they freeze well - so are great for batch cooking!

Tarragon Turkey Burgers

Ingredients
(makes 15 small patties)

  • 500 g turkey mince
  • 1 large red chilli pepper
  • 1 tablespoon course black pepper
  • 1 large red onion
  • 2 tablespoon light soy sauce (Tamari)
  • 1 large clove garlic
  • 1 red bell pepper
  • 3 tablespoon crumbs or 1 1/2 tablespoon corn starch to make it gluten free
  • 1 medium egg
  • 2 tablespoon vegetable oil
  • 2 tablespoon chopped tarragon

Preparation

Put the chilli, bell pepper, onion and garlic in a blender or food processor and pulse till combined well, they should still be recognisable (think of making salsa).

Remove the mixture from the blender and combine well with the turkey mince in a large mixing bowl. #use some gloves! as the chilli will burn if it gets in your eyes.

Add the bread crumbs, black pepper, soy sauce, egg and combine well, leave the mixture to sit covered in the fridge for ~10 minutes. This will help when it comes to forming the patties.

After 10 minutes, using a tablespoon scoop out enough of the mixture to form into a ball, flatten slightly with the palm of your hand.

They should look something like the ones below...

Put the oil in a non stick pan on medium heat, once the oil is hot (check by dropping a small bit of bread crumb in the oil, if it bubbles immediately it's hot enough).

Add the patties gently one at a time, put in as many as will hold in your pan (I could fit 8 in comfortably with enough space to flip them over).

Cook on both sides for about 3-4 minutes each side.

Remove from the pan once cooked on both sides and let them sit in the oven on low heat till you Finnish frying all the patties ( this will also help remove excess oil form the patties).

Done!

Serve it how you like...

I had it with steamed broccoli, plantain, rice and spinach with sesame seeds.
