Here's another 'Waste-Not-Wednesday' you remember that 'Sumac Pilaf'? well, here is what I did with the left overs!
In all honesty I feel like I am cheating you even writing this as a recipe, but I wanted to show you how easy and accessible it is to eat healthy. Without the hard work or your food being bland and boring.
Using up your leftovers is a great way to get creative in the kitchen and reduce food waste and save you some pennies.

I have been having a spot of computer malfunction with the low down picture, but I'm working on it-this meal is not only simple, take a look at the nutrients profile below!, this is what fast food should be like.
*** Vitamin C, A, B1, B6, Manganese, Selenium
** Manganese, Sodium, Phosphorus, Folate
* Vitamin K, B3, B2, Copper, Iron, Zinc, B5
Stuffed Peppers
serves 2
Ingredients
- 2 large sweet peppers
- 1/2 cup left over pilaf

Preparation
Preheat oven to 180 degrees
Wash and dry the sweet peppers

cut the top with at least 1/2 an inch of flesh on keep to one side, next de-seed the peppers and arrange in an oven roof dish.

Take tablespoons full of the pilaf and stuff each pepper to the top,

Cover with the top and bake in the oven for 15 minutes, 20 minutes if you want the peppers without any crunch.

Serve with a side salad and you have a deliciously healthy, and filling meal without much effort.
