This ice-cream is dairy free, gluten free and soy free!!
Let's Cook...
Turmeric Ice-Cream
(serves 4)
Ingredients
- 500 ml full fat coconut milk
- 1 teaspoon coconut oil
- 2 teaspoon organic mixed spice powder #(ginger, coarse black pepper, clove, cardamom) #lightly toast these then grind to powder#
- 1 star aniseed
- 2 teaspoon turmeric powder
- 3 tablespoon runny honey (other sweetener)
- 2 chopped up frozen banana
- 6 cubes frozen mango
- Chopped roasted pecan nuts/walnuts (optional)

Preparation
Place the coconut milk, oil, mixed spice, turmeric and star aniseed in a saucepan and bring to a gently boil, stirring so it doesn't stick to the pan. Remove from heat and add the agave syrup. Stop here if you just want a lovely warm drink.
For the ice-cream
Remove the star aniseed and leave liquid to cool, put in freezer to further cool down.
In a blender put the frozen banana and mango and the cooked barley. Blend till smooth adding the cooled turmeric liquid a little at a time. (If you have an ice-cream maker, put your cold liquid in and let it do its thing). Serve topped with nuts or agave syrup
