Chia with Buckwheat and Sunflower Seeds

Howdy yah'll

Today I have for you some more chia goodness, I was so pleased with the jack-fruit version I decided to get in there and go all out. Experimenting with some different textures and flavour, the roasted buckwheat grains offered some amazing contrast in aroma and texture to this and the sunflower seeds add that extra crunchy goodness. 

Because the sunflower seeds and buckwheat grains were soaked overnight in the yoghurt, they are easier to digest which means less stress on a delicate digestive system and, you gain better release of the nutrients from them.

A word of caution here, this mixture has a lot of fibre, if you are not use to having this much fibre reduce the amount of chia seeds and make sure you have plenty of fluids throughout the day.

With that out of the way, let's get to it.

Topping

Preparation

Add all the ingredients (except topping) to a deep bowl or mug, stir well, place in refrigerator overnight.

In the morning remove from fridge and top with the extra buckwheat and sunflower seeds.
