Greetings on this fine and sunny April afternoon!
Thanks for stopping by, you are most welcome here...hope you enjoy your visit. I have been busy of late and still without an oven. But, the cooking must go on -right?- though I must say I didn't quite realise how much I use my oven. There have been a few bread cooked on the griddle pan,because I have forgotten the oven is not working. Even put a batch of flapjack in the microwave! all learning curve...sigh...I just want my oven back.
I am holding tight, the one I will be getting is out of stock, it has a steam function also, which I am excited about. I am already planning my victory over it once it gets here.
However, that's for another day, and right now I have for you a yummy, spicy, fish combo. The ketchup or brown sugar is optional, if you want to cut down the spice a little.
This dish is so easy to whip up, great accompaniment to rice or polenta. I served mine with polenta and steamed broccoli on the side. Fantastic dish for when you have visitors, so you are not chained to the kitchen and can spend valuable time with your guests.

Prawn and Tilapia

Ingredients
serves 4
- 2 tablespoons (Korean paste) Gochujang
- 2 spring onions, roughly chopped
- 1 tablespoon tomato ketchup or brown sugar* optional
- 1 large red onion, thinly sliced
- 1 clove garlic, minced
- 1 tablespoon coconut oil
- 1/2 cup water
- handful of fresh coriander

Preparation
Melt the coconut oil in a hot frying pan and cook the onions till soft and just starting to caramelise.

Add the garlic and fry for 1 minute, add the tilapia to the garlic and onions and cook for 3 minutes over medium heat.

Stir the gochujang in a mug and add 1/2 cup boiling water, stir to get rid of any lumps. Add the prawns, spring onion and watered down gochujang paste and cook for 5 minutes.

Toss in a good handful of washed and chopped fresh coriander leaves.
