Vegan Salted Caramel

This gorgeous caramel sauce was a spur of the moment addition to the boozie brownie found here. I wanted something that would balance out the bitterness of the dark chocolate in the brownies, and this certainly did the trick.

The recipe is very similar to the vegan fudge I made previously, with a couple of tweaks here and there. 

Now, the great thing about this sauce is that it goes so well with tart fruits. I had some very sour raspberries and strawberries, add a drizzle of this and it was the most amazing thing ever! this is going to be my go to secret weapon.

It takes less than 20 minutes to whip up and keeps for ages, another thing I like about this is the flavors develop more a day or two after making.

Vegan Salted Caramel


Ingredients

Preparation


Add all the ingredients (except the lecithin and coconut oil) into a heavy base pan and stir well, put the pan on medium heat stirring occasionally.

Once it starts forming bubbles, stir in the coconut oil and soy lecithin, reduce the heat even more, keep an eye as you don't want this to burn.
When the mixture has reduced by a quarter or if using light colored sugar, when the mixture color begins to take on a caramel color it should be ready.

Pour the hot caramel into a clean bowl and sprinkle with salt, ready to serve with your brownie or fruit.

Yum yum! 

The cooler the mixture gets the less viscous or runny it will be.
It's so freaking good...
