Golden Barley Salad

Today I prepared a large batch of Barley grain. Because of its robust flavour and chewy texture - the barley grain is fantastic in smoothies, salads, soups and in porridge. Available in a variety of forms: Flakes, pearl barley, pot barley, and barley meal. So, you are sure to find the type that works for you.


The Low Down:

The grain itself is a powerhouse of nutrients, such as vitamins B1 and B3 which are important in the conversion of fats, carbohydrates and proteins into energy. However, the pearl barley can lose as much as 60% of the B vitamins during processing. There's also, manganese, magnesium (the claiming mineral), selenium (antioxidant properties), copper, phosphorus and chromium (balances blood sugar levels) and dietary fibre. So, not only will it help to keep your colon healthy, it can also assist with lowering cholesterol  due to the Beta Glucans found within the fibre.

I could go on and on about the wonders of this humble grain, but you are here for a recipe so lets get started.

Because the grain can take 45 minutes to 1 hour cooking time, whenever I cook it I make sure I prepare a large batch. This keeps well in the fridge or freezer for a week (2 weeks in the freezer if you are using it for smoothies). Another tip to reduce the cooking time, is to soak the grains overnight.

Apart from the initial cooking time this meal is quick and easy!


Golden Barley Salad

*(single serving, or serves 2 as part of a larger meal)

Ingredients

3 Tablespoons Cooked Barley Grain
1 Small Carrot Julined
1 Small Golden Beetroot Thinly Sliced
Handful of Wild Rocket Washed
1/2 Tin Mackerel in Brine
1 Stalk Spring Onion Chopped
1/4 Fresh lemon Juice
1 Teaspoon Black Sesame Seeds Toasted
Salt and Pepper to taste

Preparation

Place all ingredients in a medium size bowl and toss together coating with the lemon juice and serve in your favourite plate.
